Precook the Potatoes
Place diced potatoes in a microwave-safe bowl with 3 tablespoons of water. Cover with a microwave-safe plate and microwave on high for 4-5 minutes until slightly tender but not fully cooked. Drain well. This jump-starts the cooking process without requiring you to boil them separately.
Cook the Turkey Bacon
Heat a large 12-inch cast iron skillet over medium heat. Add the chopped turkey bacon and cook until crispy, about 5-6 minutes, stirring occasionally. Using a slotted spoon, transfer to a paper towel-lined plate, leaving any rendered fat in the skillet.
Sauté the Vegetables
Add 1 tablespoon olive oil to the same skillet. Add the diced onion and bell peppers and sauté for 3-4 minutes until they begin to soften. Add minced garlic and cook for 30 seconds more until fragrant. Push the vegetables to one side of the skillet.
Crisp the Potatoes
Add the remaining 1 tablespoon olive oil to the empty side of the skillet. Add the par-cooked potatoes in a single layer. Cook for 5 minutes, then stir the potatoes and vegetables together. Sprinkle with paprika, oregano, salt, and pepper. Continue cooking, stirring occasionally, for another 5-7 minutes until potatoes are crispy and golden on multiple sides.
Return Bacon and Create Wells
Return the crispy turkey bacon to the skillet, distributing it throughout the potato mixture. Using the back of a large spoon, create 8 wells in the mixture for the eggs, spacing them evenly around the skillet. The wells should be deep enough to hold the egg whites.
Add Eggs and Cheese
Crack an egg into each well. Season eggs with a pinch of salt and pepper. Cover the skillet and reduce heat to medium-low. Cook for 5-7 minutes until egg whites are completely set but yolks are still runny (or cook longer if you prefer firmer yolks). During the last minute of cooking, sprinkle the shredded cheese over the entire skillet.
Garnish and Serve
Remove from heat. Sprinkle with sliced green onions. Serve directly from the skillet family-style, or portion onto individual plates. Offer hot sauce on the side for those who enjoy adding heat to their breakfast.
