Hearty Morning Cast Iron Breakfast
Thick-cut bacon, herb-infused potatoes and farm-fresh eggs cooked to perfection in seasoned cast iron for a hearty morning meal.
My love affair with cast iron cooking began in my grandmother’s kitchen, but it was perfected during my time working at an Asheville farm-to-table restaurant. This breakfast became our chef’s special after particularly busy Saturday night services. There’s something magical about the way cast iron distributes heat that creates the perfect texture in potatoes and gives bacon that ideal balance of crisp and chew. I’ve made this countless times for weekend guests, and watching their faces as they taste the first bite never gets old.

Preheat and Prepare
Preheat oven to 400°F. Place a 12-inch cast iron skillet in the oven to preheat while you prepare the ingredients. In a large bowl, toss potato chunks with olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, chopped rosemary, and thyme leaves.
Cook the Bacon
Carefully remove the hot skillet from the oven and place over medium heat on the stovetop. Arrange bacon slices in the skillet and cook until crisp, about 4-5 minutes per side. Transfer bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.
Cook the Potatoes
Add the seasoned potatoes to the hot bacon fat in an even layer. Cook undisturbed for 5 minutes to develop a crust, then stir and continue cooking for 5 more minutes. Add onions, bell peppers, and garlic, stirring to combine. Return to the oven and roast for 15 minutes until potatoes are golden and vegetables are softened.
Add Eggs and Finish
Remove skillet from oven. Create 8 wells in the potato mixture. Crack an egg into each well. Crumble bacon and sprinkle over the top along with Parmesan cheese. Return to the oven and bake for 6-8 minutes until egg whites are set but yolks are still runny (or longer if preferred). Finish with chopped parsley and serve directly from the skillet, family-style.
