Heat a 12-inch cast iron skillet over medium heat. Add chopped beef bacon and sausage. Cook, stirring occasionally, until beef bacon is crisp and sausage is browned, about 8-10 minutes. Using a slotted spoon, transfer meats to a paper towel-lined plate, leaving the fat in the skillet.
Pan-Fry the Potatoes
Increase heat to medium-high. Add diced potatoes to the skillet in an even layer. Season with 1 teaspoon salt and ½ teaspoon pepper. Cook without stirring for 5-6 minutes to develop a crust. Stir and continue cooking for another 8-10 minutes, stirring occasionally, until potatoes are golden brown and tender.
Add Vegetables and Seasonings
Reduce heat to medium. Add onion and bell peppers to the skillet. Cook for 5-6 minutes until vegetables begin to soften. Add garlic, remaining ½ teaspoon salt, remaining ½ teaspoon pepper, paprika, thyme, rosemary, and cayenne (if using). Stir and cook for 1 minute until fragrant.
Return Meats and Create Wells
Return the cooked beef bacon and sausage to the skillet and stir to combine with the potato mixture. Using the back of a spoon, create 4 wells in the mixture. Crack an egg into each well. Sprinkle the shredded cheese over the entire skillet.
Finish Cooking and Serve
Cover the skillet and cook for 4-5 minutes until egg whites are set but yolks are still runny (or longer if you prefer firmer yolks). Remove from heat, sprinkle with sliced green onions, and serve immediately. Offer hot sauce on the side if desired.
