Ingredients
4 slices bacon, chopped
1 lb Yukon gold potatoes, diced into ½-inch cubes
1 medium yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp dried thyme

Crisp the Potatoes

Increase heat to medium-high. Add the diced potatoes to the bacon fat in a single layer. Cook undisturbed for 4-5 minutes until the bottoms are golden brown. Stir and continue cooking for another 8-10 minutes, stirring occasionally, until potatoes are crispy outside and tender inside.

Add Vegetables

Add the diced onion and bell pepper to the skillet. Cook for 4-5 minutes until vegetables begin to soften. Add garlic, smoked paprika, thyme, cayenne (if using), salt and pepper. Stir and cook for another minute until fragrant.

Return Bacon and Create Wells

Return the cooked bacon to the skillet and stir to combine. Using the back of a spoon, create 4 wells in the hash mixture for the eggs.

Add Eggs and Finish

Crack an egg into each well. Cover the skillet and cook for 3-4 minutes for runny yolks, or 5-6 minutes for more set yolks. Sprinkle with fresh parsley before serving, and offer hot sauce on the side if desired.
