Par-cook the Potatoes
Place diced potatoes in a microwave-safe bowl with 3 tablespoons of water. Cover with a microwave-safe plate and microwave on high for 4-5 minutes until slightly tender but not fully cooked. Drain well.
Prepare Pancake Batter
In a large bowl, whisk together flour, baking powder, salt, and sugar. In a separate bowl, whisk milk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry and whisk just until combined (some small lumps are fine). Let the batter rest while you start the other components.
Start the Home Fries
Heat 3 tablespoons oil in a large skillet over medium-high heat. Add par-cooked potatoes in an even layer and cook undisturbed for 5 minutes until bottoms are golden. Cook the Bacon
While the potatoes are cooking, arrange bacon on a cold sheet pan. Place in a cold oven, then set to 400°F (200°C) and bake for 15-18 minutes until desired crispness. Transfer to a paper towel-lined plate.
Make the Pancakes
Heat a griddle or large non-stick skillet over medium heat. Lightly grease with butter or oil. Pour 1/4 cup portions of batter onto the griddle. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook until golden on the second side, about 1-2 minutes more. Keep warm in a low oven while cooking the rest.
Cook the Eggs
In a large non-stick skillet, cook eggs according to preference. For sunny-side up, cook on medium-low until whites are set but yolks are still runny, about 3-4 minutes. For over-easy, flip after 3 minutes and cook for 30 seconds more. Season with salt and pepper.
Assemble the Plates
For each serving, place 2-3 pancakes on one side of the plate. Add a portion of home fries, 3 slices of bacon, and 2 eggs. Serve with butter and real maple syrup on the side.
