From Restaurant Rush to Real-World Rhythms

I started as a line-cook who could fillet a salmon in 48 seconds but still ate take-out at 10 p.m. Back-to-back services taught me speed, but parenthood and a shoestring budget taught me systems. When my own kitchen chaos mirrored my customers’ pain points—time shortages, picky eaters, rising food prices—I converted my chef’s notebook into field research: Could restaurant mise-en-place principles shrink weekday dinner to 30 minutes without sacrificing nutrition or flavor?
