The first time I created this hearty meat lovers hash was during a mountain cabin retreat with friends. With limited ingredients but hungry hikers to feed, I combined all our breakfast meats with crispy potatoes, and magic happened. Years later, it remains my go-to recipe when hosting weekend guests—the tantalizing aroma of sizzling beef bacon and sausage never fails to lure sleepy visitors out of bed on even the coldest mornings.

Equipment Needed
12-inch cast iron skillet
Large pot for parboiling potatoes
Cutting board
Sharp knife
Wooden spoon or spatula
Slotted spoon
Measuring spoons
Paper towels
Ingredients
4 strips thick-cut beef bacon, diced
8 oz breakfast sausage, casings removed
6 oz meat steak, diced into 1/2-inch cubes
1 1/2 lbs russet potatoes, diced into 1/2-inch cubes
1 medium yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
1/2 teaspoon smoked paprika
4 large eggs
3/4 cup shredded sharp cheddar cheese
2 green onions, thinly sliced
Salt and freshly ground black pepper to taste
Instructions
1

Parboil the Potatoes

Place diced potatoes in a large pot and cover with cold water. Add 1 teaspoon salt. Bring to a boil and cook for 3-4 minutes until slightly tender but still firm. Drain well and set aside.

2

Cook the Meats

Heat a large 12-inch cast iron skillet over medium heat. Add diced beef bacon and cook until crisp, about 5-6 minutes. Using a slotted spoon, transfer to a paper towel-lined plate, leaving the fat in the pan. Add the breakfast sausage to the skillet, breaking it up with a wooden spoon, and cook until browned, about 5 minutes. Transfer to the plate with the beef bacon. Add the diced meat to the skillet and cook until lightly browned, about 2 minutes. Transfer to the plate with other meats.

3

Cook the Vegetables and Potatoes

In the same skillet with the remaining fat (add 1 tablespoon olive oil if needed), add the onion and bell pepper. Cook until softened, about 4 minutes. Add the garlic and cook for 30 seconds until fragrant. Add the drained potatoes, thyme, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook, stirring occasionally, until potatoes are crispy and golden brown, about 8-10 minutes.

4

Combine and Add Eggs

Return the cooked meats to the skillet and combine with the potato mixture. With the back of a spoon, create 4 wells in the hash. Crack an egg into each well. Season eggs with salt and pepper. Cover the skillet and cook until egg whites are set but yolks are still runny, about 4-5 minutes.

5

Finish and Serve

Sprinkle shredded cheese over the hash and cover again until melted, about 1 minute. Garnish with sliced green onions. Serve directly from the skillet while hot, ensuring each portion includes an egg.

Pro Tip: For maximum flavor, cook the meats in sequence (bacon first, then sausage, then meat) using the same skillet to build a rich flavor base.
